Cedar + Elm

The centerpiece of our culinary program, Cedar + Elm, provides an inspired dining experience crafted by authenticity and connected to a sense of time and place. Cedar + Elm celebrates the bounty of our region with a uniquely Pacific Northwest approach, influenced by the seasons and the historic dining room.

Menus focus on pinnacle ingredients; defined by seasonality, sustainable sourcing, and harvesting. The culinary team engages with local farms and small growers, and sources ingredients from our own Chef's Garden and apiary to offer the very best ingredients. All of this culminates to create familiar and approachable dishes with refined and simple presentations, coupled with bold flavors.

The light-filled dining space is a nod to the restaurant's former life as the Saint Edward Seminary dining hall, with original windows and historic design details. A terrace allows for seasonal outdoor dining to soak in the tranquil natural beauty of the surrounding state park.

Dinner: Sunday - Thursday, 5 - 9 PM; Friday & Saturday, 5 - 10 PM
Afternoon Tea: Thursday & Friday, 2:30 - 4:30 PM
Holidays: Please note Afternoon Tea is not offered on Thanksgiving Day. Holiday dining on Thanksgiving, Christmas Eve, Christmas Day, and New Year’s Eve is by reservation only.

Father Mulligan’s
Heritage Bar

Inspired by the rich history of The Lodge, Father Mulligan’s Heritage Bar is named after the former Saint Edward Seminary’s first president. Today it offers a warm, inviting atmosphere for classic cocktails, craft beers, and local wines in addition to wood-fired flatbreads, charcuterie, burgers, seafood, and sweet treats.

The Tonsorium Bar

This creatively reimagined space was originally the seminary’s barbershop, hence its Latin name. Explore the imaginative mixology on show at the bar, and admire authentic relics from the building’s past that have been worked into the decor, including heirlooms from the three family barbers — Heavy, Fats, and Slim.
